Last year phone calls and texts between my husband and i ended up costing close to 400.00!!!! These were calls back and forth on our cell phones from home. I didn’t think it would add up like that- but OUCH!
My girlfriend came down and bought a phone at Dollar Tree ( or similar- like Walmart/Target) for 20.00 and included the phone AND 25.00 worth fo service. She never did have to refill. She is coming again and using the phone. I think she bought the “Virgin” phone plan and phone.
So this is what we will do. A much better idea than using our own long distance/roaming on cell phones.

This was quite odd- i had called a couple of times to see if they could apply discount and they couldn’t. I called this morning about something else to try- the woman was very helpful- and she said no- it couldn;t be applied. I called back AGAIN to ask about Internet access- which is terrible btw
, and asked yet again- we are talking about 10 minutes later- and he was able to apply- was a significant amount- 150.00 difference and all I did was call back and get a different operator.

We are going to Fort Wilderness soon. This may be blasphemy- but I don;t think we will go to Disney Parks this year ( gulp). The money is just too much for our family.

This is delicious- I make this at home even when we are not camping. A good one for dry camping or if you are in remote area and no access to fresh foods.
Ingredients:
Chile spices: Cumin, garlic powder or sale and chili powder. dried onion flakes You can also buy package of your favorite brand i.e. Club House Chile Spice
salt
Canned Carrots
Canned corn ( NOT cream of corn!)
can of black beans
can of red kidney beans
optional- can of chick peas
2 cans diced or whole tomatoes. I like plum.
optional- bulgur wheat ( this gives it some “meat” ). Soak in the juices of tomatoes for about 1/2 hour if you like.
Vegetable oil.
Ad about Tbs. vegetable oil to large pot. Stir is spices, add all your canned goods. Check spices- add salt to taste. Add bulgur wheat ( if you choose) simmer for about 20mins-1/2 hour. Serve with rice or bread.
This like most chiles is even better the next day.

I am putting together a meal plan for camping trip and posting some of our tried and true meals and recipes that we make while camping. We seldom do total dry camping but are often in remote areas. Most recipes assume you have a cooler.
Kids LOVE these Quesadillas- they are easy and fast to make.
I spend the extra money and buy pre-shredded cheese when camping.
Shredded or grated cheese. You choice can be Monterrey jack, mozzarella, cheddar or a blend of “nacho” cheeses.
Tortillas
Vegetable oil
optional: vegetables such as mushrooms, diced tomatoes, jalapenos, zucchini, green pepper, etc. If using raw saute first.
You can also try canned mushrooms and other veggies.
Heat oil in frying pan. Lay down tortilla and sprinkle on cheese and other fillings. Fold over. Turn over when one side is golden brown. Cook until cheese melted.
Serve with salsa and sour cream.

We have done some camping in Florida this year- and after staying at For Wilderness ( Disney Campground) it has been fun trying out other campgrounds.
One park that was particularly nice for camping was
Fort De Soto State Park in Pinallas, this was near Clearwater/St. Petersburg area. We had very nice time there. The park was lovely. Sites on the water could get VERY windy.
Weekends were always fully booked- mostly with local area families. Beach near by was gorgeous- though too cold for swimming in early February when we were there.
